Every year, the residents of Huainan gather to celebrate the New Year with a dumpling competition that serves up a unique history.

It was here that 2000 years ago tofu was first made. That's why dumplings made with tofu have become a unique local delicacy.

Contestants handle the delicate bean curd with loving care.

[Tu Changhu, Local Chef]:
"It looks easy to make tofu dumplings, but in fact, we have to select the material and make the dumplings very carefully. The material must be specially-made local tofu, which makes the dumplings tasty and gives it the right shape."

[Hua Beibei, Local Resident]:
"Tofu means 'duofu'(more happiness), everyone eats a bowlful of tofu dumplings during Chinese New Year. It is our tradition, and it also carries the best wish of more good luck in the New Year."

After hours of chopping, boiling and careful presentation, the judges make their call. This year, local chef Tu Changhu won. But in the end, it was the audience that was the real winner.
